1. As-You-Go Loading

Imagine preparing enough food to cater a wedding with a list several hundred guests long. You might begin food preparation several days out from the event. What will you do with that food? You can store it in your own walk-in cold room and then transfer it to a fridge trailer on the day of the wedding. But that's double work. It makes more sense to start loading the trailer at the same time preparations begin.
